These are the easiest pancakes to make and so healthy for all you low-sodium, gluten-free and healthy solo cookers. All you need are two eggs, one banana, a few drops of vanilla extract, and a few sprinkles of cinnamon. That’s it. Blend all ingredients together. Add oil to a frying pan or griddle and heat. Pour a small amount of batter and turn when the edges start to brown. Enjoy with some blueberries and organic maple syrup. Enjoy and have fun cooking for one.

Shredding chicken is so easy and fun and you can use shredded chicken in so many ways. Use the chicken to make yourself a salad or soup or tacos or sandwiches. Simply put two organic skinless chicken breasts in a pot along with two cloves of garlic, quartered. Cover with water. Add salt-free Dash, pepper, poultry seasoning, 21 seasoning salute (Trader Joes). Boil for 25 minutes or when you poke the chicken it feels firm. Place on a plate and let cool slightly. Using two forks shred the chicken. Place chicken in a container to be used later. You can even freeze half for later. Use the chicken broth from the boiled chicken to make rice. Usually 2 cups water or broth and 1 cup rice. If you don’t have 2 cups left from the chicken you can add water or organic low sodium chicken broth to make 2 cups. Simmer for 20 minutes. Add chicken for a meal or use the rice later on during the week. You can always add spinach or peas to your rice to make a completely healthy meal.

Calling on all Widowers, Empty Nesters, Solo Cooks

Have you recently found yourself as an empty nester or perhaps, very sad, a widower or you broke up with a partner and are flying solo? You find that you don’t have to cook every day and find it’s difficult to cook for yourself. You find that you are eating really unhealthy by just eating grab-and-go or packaged foods loaded with artificial ingredients and tons of sodium. Well, I understand completely because that’s what happened to me and it started causing health issues such as high blood pressure. After a scare like that, I came up with easy recipe ideas that only take about 30 minutes to prepare, are fresh and healthy, and will make enough for one meal or a few to enjoy during the week.

The egg bites are so easy to make. Preheat oven to 400F. Chop up green onions, roasted red peppers, garlic, and spinach. Add 4 eggs to a bowl and add the chopped veggies. You can actually add anything you want, any type of veggies, or meat. Grate about 1/2 cup cheese of your choice. Whip a dollop of sour cream into the eggs and whip till fluffy. Grease the small muffin tin and fill it to the top. Bake for 20 minutes. You can eat 3-4 egg bites. Divide the remainder egg bites individually into 3-4 pieces of aluminum foil. Wrap and store in the fridge. You can just grab a package and reheat them in the oven at 350F for 5 minutes. I don’t add any salt but you can add salt and pepper or a dash of Salt-Free Dash.
